Good Old Caramel-Toffee Sauce - Don't Tell Anyone It's Easy To Make

Is there really anything that a toffee sauce won't cure? Probably not. I love caramel sauce, it makes so many desserts over the top delicious. You do not have to buy it from the market, you can make it!

Remember it is easy but also remember it is a hot, molten mass of sugar. So be careful when you are making it. Here is the recipe:

Ingredients:

1 1/3 cup packed brown sugar
3/4 cup unsalted butter
1/3 cup whipping cream ( 35% )
2 tablespoons brandy or whiskey ( very optional I don't use it )
Pinch of salt

Method:

In a pot, place the butter, sugar, and salt. Bring to a simmer till the sugar has dissolved, then add the cream. Continue simmering till the caramel bubbles vigorously, stirring constantly until it thickens (about 5-minutes). Remove from heat and serve.

Note: If you plan on adding brandy now is the time, when the caramel is off the heat and a safe distance from a flame. As a matter of fact...turn off any flames in the vicinity.

This recipe is from Canadian Living Magazine. I hope you like it. Let me know. I added the picture at the end so you can see. Yes, it's really a normal kitchen and we make a mess. It also helps demonstrate the caramel consistency.
