Delicious Tuna Noodle Casserole - Quarantine 2020

In the '90s, tuna casserole was a "thing." I did not make it a lot but now that nostalgia and frugal uses for food are at the forefront of my mind, it popped up when I saw a can of tuna in the pantry. If you have some pasta in the pantry, a can of soup, and a can of meat like tuna or chicken, you are off to the races. 


Add it all together in a large bowl and then pour into the casserole dish.



Ingredients:

10 1/2 oz cream of chicken soup - 1 can of cream of chicken soup 
1/2 cup mayonnaise
1/4 cup milk
1/2 cup diced white onion (diced small)
1/2 cup diced celery (diced small)
6oz tuna drained - I used one can
6oz by weight cooked egg noodles - I used 3 cups elbow macaroni, cooked
1/4 cup shredded cheddar cheese - use any nice cheddar, even jalapeno or habanero
Salt and pepper to taste
Potato chips or crackers - not in the recipe but I added a few chips on top. 

Method:

Mix the cream of chicken soup, mayonnaise, and milk together in a large bowl. Add diced celery and onion. Fold in drained tuna. Fold in cooked noodles and then the cheese. Sprinkle aalt and pepper to taste.

Place in a casserole dish. I used a 9"- 6" dish. Cook 375* for 40-45 minutes, just till the top browns. 

Alternatives: Use sour cream instead of mayonnaise. Add garlic and herb seasoning and put                         grated cheese on top. 
                    : Use canned chicken instead of tuna
                    : Use low-fat cottage cheese (emulsified), almond milk, sauteed shrimp with                             garlic and parsley
                    : Use other cheddar cheeses, like habanero or jalapeno or applewood smoked                             cheddar
                    : Use frozen defrosted vegetables, like corn peas and carrots 
                    : Use poultry seasoning and celery salt if you use canned chicken
                    : Use any cream of soup and also add some fried onions on top.
