Use Your Freezer Foods, Make A Stew! ~ Seafood Vegetable Curry Stew

It is time to cook from what is in the freezer or pantry. This is frozen seafood and vegetables in a nice milk/curry stew. The flavor is very Danish, a lot like the curried meatballs and rice I make. 

Seafood Stew:


1 cup frozen Minnesota vegetable mix (onion, celery, and green pepper) cut small
1 cup mixed frozen vegetables (corn, peas, beans, carrots)
1 medium potato, shredded
1 large cod fillet - other fish is fine
1/4 cup butter
1/4 cup flour
2 cups of milk
1 teaspoon chicken bullion (like Better Than Bullion)
1 teaspoon turmeric
1 1-2 teaspoons curry powder
Parsley flakes
Salt and pepper to taste

Method:

Add a small amount of olive oil in a pot. Add the Minnesota mix mirepoix and let it sweat till aromatic.

Add butter and flour and combine. Warm the milk before adding to pot. Add milk and stir till it begins to thicken. Then add the chicken bullion, turmeric, and curry powder. Incorporate remaining vegetables and grated potato after you run some warm water over the frozen vegetables to defrost.

Poach the cod in a separate pot till it flakes. Add it to the stew at the end so you don’t overcook the fish.

Thickness is determined by your preference, add water if you want a thinner stew. Eat accompanied by rice or noodles or mashed potato. I had it with a slice of cheese focaccia bread.
