When you start preserving, make sure to follow safe recipes from a safe source, like NCFHP and Ball and Bernardin. If recipes are not found in these places, you are taking chances. I do make small-batch preserves from Food In Jars because I trust them but the others are deemed indisputably safe, so do not make canning recipes you randomly find on the internet. Trust Mum on that one.
