Excellent Applesauce Spice Cake





It has become one of my personal favorite cakes. It's perfect for tea or coffee and it's not too sweet. You can adjust the spices to your preference, I like the taste of cinnamon and nutmeg. It is a large cake, heavy and moist, and it keeps really well.

Applesauce Cinnamon Cake

3 cups flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 teaspoon nutmeg or cardamom or pumpkin spice 
1 cup of butter
2 cups brown sugar
1/4 cup honey - I use buckwheat honey, molasses might work in a pinch
2 eggs
Salt to taste
1 pint applesauce (2 cups)

Method:

1. Preheat oven 350 degrees. In a large bowl, add all dry ingredients and whisk together.
2. In a second bowl, add the soft butter, sugar, and honey and beat until it is light and fluffy, adding one egg at a time. 
3. On low speed, add the flour in small increments until combined. It will blow back at you if you add too much so be patient and add small amounts of flour at a time.
4. Generously grease a 9x13 inch pan, spoon in the batter, smooth the top. Bake for  50 to 60 minutes, until a toothpick inserted comes out clean.
