Christmas Tree Cupcakes - Cute & Delicious!
Mother-Daughter Cupcake Christmas Trees
The holidays are about family time. I love baking and cooking with my daughter. She has always asserted she wants to be a pastry chef one day. Who am I to discourage that? We have a recipe for a white cake from Buddy Valastro which we used for the cupcake. As Chef Gaskin always said: any cake recipe can become cupcakes. So if you can't make it from scratch remember there are very economical box cake mixes you can use. We made two dozen, many have already migrated to neighbors' houses.
It was so much fun in the kitchen. Mixer whirling, butter everywhere, eggs, flour. So much fun! I did not have any fancy cake decorating accents so we used Halloween smarties :) Turned out nice, right?
Buddy's Vanilla Cake (Makes 24 Cupcakes):
1 1/2 cups sugar
3/4 cup vegetable oil
1 teaspoon salt
1 teaspoon vanilla
2 teaspoons baking powder
1 stick butter
2 cups cake flour - we used regular flour
4 whole eggs
1 1/2 - 2 cups milk
Method:
Place the dry ingredients in mixer, combine with the paddle. Add the wet ingredients, eggs one at a time, and let mix till combined. It will be a wet batter. Divide the batter into parchment lined muffin cups. This recipe will make 22 - 24 cupcakes depending on your dividing skills.
Bake in 350* oven 30 minutes or until baked and golden on the top. You will need to test and place it back in the oven if it is still wet in its center. Remember it is done when it is done, a timer does not bake it; you do.
The buttercream we used was a recipe from Cupcake Jemma. We made this recipe and divided it in two and then made half green.
Buttercream Ingredients:
200 grams soft unsalted butter
320 grams icing sugar, sifted
1 teaspoon vanilla - approx.
Method:
Beat the butter for 5 minutes. Add the icing sugar in two-three increments. Add the vanilla to taste.
Now all that is missing is for you to make these and enjoy.
